Syrupy Banana-Nut Overnight French Toast

  • 6 T. butter
  • 1 1/2c. brown sugar
  • 5 large ripe bananas, sliced
  • 1 (12oz.) long loaf of French or Italian bread, sliced into 1" thick slices
  • 6 large eggs
  • 2 c. milk
  • 2 tsp. vanilla extract
  • 1 tsp. ground cinnamon
  • 1/2 c. slide almonds, walnuts or pecans

In a microwave safe bowl, heat butter on high for 1 minute or until melted. Stir sugar into butter. Press sugar mixture onto the bottom of a 9x13" glass baking dish (it's OK if the mixture doesn't cover the whole dish. Spread bananas over the sugar mixture; top with bread slices. In a medium bowl, whisk together eggs, milk, vanilla and cinnamon. Slowly pour mixture over bread; press down to absorb egg mixture. Sprinkle with nuts. Cover with plastic wrap and refrigerate overnight. When ready to bake, preheat oven to 350 degrees. Remove plastic wrap from baking dish, bake uncovered for 45-50 minutes or until bread is golden brown and knife inserted in center comes out clean. Let stand for 10 minutes before serving. 

Lord Charley's Corn Chowder

  • 1/2 c. chopped onions
  • 1/2 c. chopped celery
  • 1/2 c. chopped green pepper
  • 1/3 c. bacon
  • 1 1/4 qts. chicken stock
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1-lb. peeled and diced potatoes
  • 16 oz. frozen corn
  • 1 tsp. crab boil seasoning (optional)
  • 4 T. butter
  • 2 T. flour
  • 1 qt. half and half

Brown: onions, celery, green pepper, bacon. Add: chicken stock, salt, pepper, and diced potatoes.Add frozen corn and cook until corn and potatoes are done. Add 1 tsp. crab boil seasoning. In the microwave melt butter, add flour. Add half and half to flour and butter. Stir into soup and cook 10 minutes.
